Right now I want to show you this boat he made from a single sheet of 6mm 4′ by 8′ coroplast.
While coroplast is the material’s trade name, you might also search for fluted plastic, its universal name. A local sign shop should have what you need, and you’ll save a lot on shipping by buying from a brick and mortar store.
Note: Coroplast usually comes in a 4mm thickness. This boat uses the 6mm thick variety.

I fondly remember my time as a Cub Scout. I just can’t get out of my head how awesome this project would be for some young kids to try. Yeah, I know the outboard motor might be a little dangerous, but it’s cheap and there’s so much for kids (and adults) to learn by building something like this. Plus – it looks so fun!
